From the bottle:

Located near the coastal town of San Simeon, our family’s estate vineyards are focused within the renowned Paso Robles appellation. San Simeon Cabernet Sauvignon is a blend of several steep hillside vineyards. This artisan wine is hand-crafted in small lots. It gains spice and vanilla aromas from aging in primarily French oak barrels for at least 18 months. Ripe plum and wild berry notes pair well with grilled meats, firm cheeses, and chocolate.

There’s nothing quite like a big, rich Cab and the 2019 San Simeon Paso Robles Cabernet Sauvignon certainly fits that description! It opens with very nice aromas of black cherry, blackberry and other dark fruit along with vanilla, cedar, licorice and lots of other oaky spice notes.

With a big, rich taste, it literally makes you say “Wow” on the first sip. There’s lots of oak influence thanks to all of that new French oak, but it’s quite well done and quite delicious. Add in a smooth, lush texture and juicy, dark fruit wrapped up beautifully in spice, chocolate and vanilla and this is a crowd-pleasing Cab with a fair amount of complexity as well.

It ends dry, long and a bit dusty with lasting vanilla and cocoa notes under the fruit. Fabulous!
