“I was in 3rd year of hotel management when the 1st lockdown happened due to the corona crisis…I found myself having a lot of free time, so I decided to do something creative with my free time, this is when I start flaring…I used to practice for 7 to 8 hrs by watching Youtube videos…then did bartending course in EBS.

After completing my course I got selected by Hyatt Hotels as a Bartender and after 7 months I moved to another property. DLF CAMELLIAS CLUB IN GURGAON and it’s been 4 months that I’ve been working here.” Shashank Kakade

What was the inspiration behind your Beetroot & Chocolate Royale Cocktail?

“Inspiration came when I was experimenting with beetroot. I mean what goes well with beetroot…and that time I have rosemary basil mint and cocoa powder…I tried everything with beetroot…and finally, the combination of beetroot and cocoa powder really hit me…I served it to my manager… and he really liked it… and he immediately added this cocktail to the menu. That’s it.”

  • Beetroot and Cocoa Powder Sous Vide Decoction
  • Vodka
  • Lime Juice
  • Sugar Syrup
  • Sparkling Wine
  • Garnish – Dehydrated Lemon

How To Make The Beetroot & Chocolate Royale

Glass – Champagne Flute

  • Beetroot and Cocoa Powder Sous Vide Decoction 60ml
  • Vodka 30ml
  • Lime Juice 15ml
  • Sugar Syrup 10ml
  • Sparkling Wine – Fill
  • Garnish – Dehydrated Lemon
